Description

Frozen kataifi dough is a traditional semi-finished confectionery product made from flour, sugar, vegetable oils, salt and water. It comes in the form of thin strands with a uniform colour and a characteristic taste and aroma. After heat treatment, it becomes golden and crispy, making it an excellent base for many desserts.

It is distinguished by its unique structure of fibrous strands, which absorb syrups well and combine with various fillings, such as nuts, cheese or creams. It is also used in modern confectionery compositions, including the popular ‘Dubai chocolate’, where it gives the product its characteristic crunchiness.

Technical aspects

Frozen kataifi dough has a neutral taste and smell, uniform colour and appropriate moisture content, thanks to which it retains its properties after thawing and baking. The product is suitable for vegetarians.

Storage

Frozen kadyjf should be stored in a freezer at -18°C until the date indicated on the packaging. After thawing, it can be stored in a refrigerator at 7°C for up to 7 days or at room temperature for up to 3 days, protected from heat and direct sunlight.

The product is offered in bulk packaging suitable for contact with food, protecting against drying out and mechanical damage.
