Description

Cinnamic Aldehyde is an organic aromatic compound supplied as a pale yellow to yellow liquid with a strong, sweet and spicy cinnamon-like odour. It is one of the key flavour and fragrance components naturally occurring in the bark of cinnamon trees (Cinnamomum), where it is responsible for the characteristic warm and spicy aroma of cinnamon. The product consists predominantly of the trans isomer, recognised for its superior aromatic intensity and stability compared to the cis form.
