Description

Ammonium bicarbonate is an inorganic chemical compound that occurs as a white, crystalline powder. It is characterised by its alkaline reaction, neutral odour and ability to decompose at elevated temperatures, during which gases – ammonia and carbon dioxide – are released.

Due to its thermal decomposition properties, ammonium bicarbonate is mainly used as a raising agent. This compound is also used in industrial processes requiring the release of gases, as well as an ingredient in some fertilisers and cleaning agents.

Ammonium bicarbonate is a white, crystalline powder with an alkaline pH and characteristic reactivity at elevated temperatures. It is a mixture of ammonium bicarbonate (E503II) and a small amount of anti-caking agent (E504I).

Application

Ammonium bicarbonate is used in the baking industry as a raising agent in the production of cakes, gingerbread and biscuits. When exposed to heat, it releases gases that give the product a light structure and crispness.

This compound is also used in the chemical industry and agriculture, including in fertilisers, cleaning agents, washing powders and processes requiring a source of ammonia and carbon dioxide.

Storage

Store in a dry, cool and well-ventilated place, away from acids. The storage temperature should not exceed 30°C. The product tends to clump, but this does not affect its chemical or biological properties.
