Description

Tara gum is a natural food-grade hydrocolloid obtained by grinding the endosperm of seeds of Caesalpinia spinosa, a plant belonging to the Leguminosae family. The product consists mainly of high-molecular-weight polysaccharides, predominantly galactomannans, which provide excellent thickening and stabilising properties.

In food processing, tara gum is valued for its functional versatility and clean-label appeal. It can be used alone or in combination with other hydrocolloids to enhance texture, improve freeze–thaw stability and control syneresis.

Technical aspects

Tara gum is supplied as a white to white-yellow, odourless powder with a neutral sensory profile, allowing it to be used without affecting the taste or aroma of finished products. It hydrates efficiently in aqueous systems, providing smooth and consistent viscosity across a wide range of formulations.
