Milk protein concentrates do two things well. Nutritionally, they raise a product’s protein content without adding much fat or lactose, which suits high-protein and lower-sugar recipes. Technically, they improve texture, firm up the body of a product, and help hold gels and emulsions together. Milk Protein Concentrate 60 is 60% protein and little else - 0.7% fat and just 0.05% lactose, which makes it virtually lactose-free. A light, white-to-yellowish powder with a mild milky taste, it’s a natural fit for lactose-free and dietary recipes, as well as protein bars, supplements and yogurt. Milk Protein Concentrate 85 (MPC 85) takes the protein higher still - up to 86% in dry matter, with no more than 2.5% fat. It’s a fine powder with a neutral taste and dissolves well, so it blends cleanly into both dry and liquid recipes without affecting the flavour. It’s the grade for more demanding uses: infant formula, processed cheese and cheese analogues, high-protein cheeses, fermented dairy and sports nutrition.Specification, packaging and storage
Both grades come in 20–25 kg bags and Big Bags, made to consistent, declared specifications. MPC 85 is GMO-free, with the allergen declared as lactose of milk origin. Keep the powders somewhere cool and dry - MPC 85 stores best below 23°C and 65% relative humidity - in their original sealed packaging, away from light, heat and strong smells. How is milk protein concentrate made, and why is it low in lactose?
MPC is made by filtering milk to concentrate the protein, then spray-drying what’s left into a powder. Filtering out most of the lactose along the way is what gives the higher grades their low-lactose profile - MPC 60, for one, is virtually lactose-free.How does milk protein concentrate differ from skimmed milk powder?
