Description

Buttermilk powder is a dairy product obtained by spray drying fresh, separated buttermilk. It is a free-flowing powder, white to slightly yellow in colour, with a clean and natural aroma characteristic of buttermilk. Thanks to its versatility and nutritional properties, it is a valuable ingredient in industrial recipes.

Due to its high protein content (min. 25%) and naturally occurring milk fats, the product is widely used in the baking, confectionery and dairy industries and in the production of instant foods. It has a positive effect on the structure, taste and texture of finished products, and its easily soluble form facilitates application in powder mixtures.

Technical aspects

The product is a free-flowing powder with a uniform consistency and a white or slightly yellowish colour. It has a natural buttermilk aroma and taste, without any foreign or undesirable notes. Thanks to its good solubility, it is ideal for instant formulations.

Application

The product is widely used in baking and confectionery as a natural stabiliser, emulsifier and flavour carrier. It has a positive effect on the consistency and colour of baked goods, fillings and creams. It is also used in the production of chocolate and milk fillings.

Buttermilk powder is also widely used in the dairy industry – in the production of ice cream, cheese, yoghurt and in instant recipes: soups, sauces, dressings and ready-made mixes. Due to its good solubility and mild taste, it is suitable for instant products and functional foods.

Storage

The product should be stored in a dry and clean warehouse at a maximum temperature of 25°C and relative humidity of up to 65%. Recommended storage in the original, tightly closed packaging.

Buttermilk powder is available in sturdy 25 kg bags, which ensure safe and convenient storage of the product during transport and storage.
