Description

Food-grade rennet casein 90 mesh is obtained from pasteurized, skimmed cow’s milk through enzymatic coagulation, followed by drying. This process preserves the high protein content and key functional properties important in various technological applications. The product is a loose, homogeneous powder ranging in color from white to light cream.

Natural enzymatic casein is characterized by a neutral taste and smell, and good solubility. Its low levels of fat, lactose, and moisture, combined with high microbiological purity, make it suitable for both food and industrial applications.

Technical aspects

Enzymatically coagulated casein is in the form of a free-flowing powder, which may form small, easily dispersible agglomerates. The product has a clean sensory profile free from foreign odors or tastes and stable physicochemical properties.

Application

Enzymatic casein is used in the production of processed cheese, cheese analogues, dairy products, protein preparations, and high-protein foods. Its ability to form stable structures makes it valuable in recipes requiring gelling or binding properties.

Enzymatically coagulated casein is also used in the technical industry – in the production of adhesives, biodegradable materials, coated paper, and industrial additives. Its structural functionality and high purity make it a reliable material for demanding applications requiring consistency and stability.

Storage

The product should be stored in a cool, dry, and clean warehouse at around 20°C and relative humidity below 70%. The original sealed packaging protects it from light, odors, and air exposure
