Description

Carob powder is a natural product obtained from the fruit of the carob tree (Ceratonia siliqua), processed by cleaning, crushing, roasting and grinding. The raw material is a loose, dark brown powder with a pleasant taste and aroma reminiscent of cocoa and coffee notes.

Carob powder is distinguished by its high dietary fibre content (~60%) and low fat content. Thanks to its natural origin, absence of GMOs and allergens, and mild taste, it is safe and well tolerated in functional foods and foods for children.

Technical aspects

Carob powder is characterised by a fine structure (98% of particles <75 microns), natural colour and microbiological purity. It has a low moisture and ash content and is free from pathogens.

Application

Carob flour is used as a natural substitute for cocoa in the confectionery, bakery and dairy industries. It is used in the production of bars, muesli, creams, desserts, ice cream, biscuits and instant drinks.

Thanks to its high fibre content and low calorie content, carob powder is a valuable ingredient in functional, healthy and vegan foods. It is used in clean label products, as well as in nutrition for children and people with intolerances.

Storage

Carob powder should be stored in a cool, dry place, away from direct sunlight.

Package

Ground carob is packed in multi-layer paper bags with an inner polyethylene liner – standard packaging is 25 kg.
