Description

Cocoa Powder Alkalized 20-22% is a high-quality cocoa powder produced from roasted, broken, and de-shelled cocoa beans. The beans are ground into liquor, hydraulically pressed, and pulverized into a fine powder, with alkalization ensuring a balanced flavor profile. Its rich aroma, deep brown color, and free-flowing texture make it ideal for industrial applications in confectionery, bakery, and beverages.

Technical aspects

This cocoa powder has a maximum moisture content of 4.5%, pH up to 8.8, and fineness of at least 99.8%. Microbiological standards ensure safety, with Salmonella and E. coli absent in 25g, and total plate count under 5000 cfu/g. It is allergen-compliant (cocoa) and GMO-free, stored at 18-22°C with 50-60% relative humidity for optimal preservation.

Storage

Store alkalized cocoa in a tightly closed container in a cool, dry and dark place. Avoid direct sunlight and moisture to preserve its quality and aroma. The ideal storage temperature is between 15°C and 20°C.
