Description

Potassium sorbate is the potassium salt of sorbic acid, available in the form of white or slightly cream-coloured granules. The product is characterised by a neutral taste and lack of odour, which facilitates its use in food recipes.

The E202 preservative additive is distinguished by its high purity and thermal stability – it does not change colour even when heated. Thanks to these properties, it is widely used in the production of foods that require protection against the growth of microorganisms.

Application

Potassium sorbate is used in the food industry as a preservative to protect products against mould, yeast and certain bacteria. It is used in the production of bread, cheese, yoghurt, juices, wines, margarine and confectionery.

Potassium sorbate is also used in non-alcoholic beverages, sauces and vegetable preserves, where it extends shelf life and maintains the sensory quality of products.

Storage

Potassium sorbate retains its properties for 24 months. It should be stored in a dry and cool place, in its original, tightly closed packaging, away from sources of moisture.
