Description

Vital wheat gluten is a natural protein obtained from wheat through a process of separation and drying. The product is a light, fine powder ranging in colour from creamy white to slightly yellowish, with a neutral odour and uniform structure.

Wheat gluten isolate is characterised by a high protein content (minimum 80% in dry matter), low ash and moisture content, and good water absorption capacity. The product is microbiologically stable and free from pathogens.

Active wheat gluten is characterised by high purity and a uniform consistency. The product binds water well and its microbiological and physicochemical parameters meet food industry standards.

Application

Wheat gluten isolate is used in the baking industry as an ingredient to improve dough elasticity, crumb structure and baked volume. It is particularly useful in the production of wheat and rye bread, as well as in bread mixes.

Wheat protein concentrate is also used in the production of plant texturants, high-protein products and in industrial recipes requiring strong binding and structuring properties.

Storage

Wheat gluten should be stored in a dry, cool and well-ventilated place, free from foreign odours. Relative air humidity should not exceed 60%.
