Description

Milk permeate powder is an ingredient produced by ultrafiltration of milk followed by spray drying. It is characterised by a free-flowing, homogeneous structure and a white to pale yellow colour. Its taste and aroma are clean, uniform and typical of dairy products, with no foreign notes. The product has a naturally high lactose content with low fat and protein content.

This product is GMO-free, contains milk proteins and lactose, and can be used in various technological applications. Thanks to the presence of milk sugars, it is a functional raw material for the food industry, especially where delicate sweetness and stability are required in dry or liquid applications.

Aspects techniques

Ultrafiltrated milk powder has a light, free-flowing structure and a uniform appearance. Small lumps are acceptable and break up easily. The colour of the product ranges from white to pale yellow. It remains stable under typical storage conditions and its chemical parameters allow for a wide range of applications in food technology.

Application

Ultrafiltrated milk powder can be used as a fermentation aid, flavour carrier or source of milk sugars in fermented products, milk mixtures, baked goods and instant products. It is suitable for applications requiring a mild flavour profile and good solubility.

Milk permeate powder is also used in the production of ice cream, confectionery and milk drinks as an ingredient to improve texture and processing properties. Thanks to its natural lactose content, it supports browning processes and aroma development during heat treatment.

Storage

The product should be stored in a dry and clean warehouse, at a temperature below 25°C and relative humidity up to 65%. It is recommended to use original, airtight packaging to protect against light and foreign odours.
